I'm not sure I see the conflicting information but to answer your question Yes, Mobile and A&D are included in the Starter Edition. This bundle is simply 15 Pro licenses without support. Professional Licenses always include the Mobile and A&D features.

When you purchase a NE license it can be installed on any of the distributions including the appliance. Since the appliance is no longer a separate product there are no differences in features or pricing other then the deployment model.

zimbraMailTransport should be in the form of protocol:host:port with :port being optional and defaulting to :25 if not specified. For your example smtp:smtp.onlineprovider.de:25
You can set these attributes to null to undo changes.

Please make sure you are downloading the current Appliance versions. vmware.zip is very old.

S/MIME is included with Starter, Standard and Pro licenses. As long as your support is current you can request an updated license.
