i would start with pouring over your logs, mailboxd, access, and messages. Because its a server hang you may want to start troubleshooting the OS by disabling/shutting down zimbra and seeing if the server stays up. if so, then start troubleshooting zimbra.

IIRC the /store contains all the msg files, without ldap(accounts) and sql(blobs) to accompany the message store you wont have working user accounts or mailboxes but I defer to the Zimbra gurus on definitive answer

going only off the logs you provided it seems you(or a user?) has a filter in place that is blocking email from that sender. try having them send you an email to a different recipient.
