Time to troll the logs, check out (to start) while trying to empty the trash:

- /opt/zimbra/log/mailbox.log

it's likely something is getting logged there when it fails.

Looks like whatever happened above "didn't turn out right", did you see any messages/warnings/errors during the uninstall/reinstall?
