okay, seems not to be an zimbra issue as deactivating "show only subscribed folders" in thunderbird fixed the issue.
But strange that it was working for such a long time and now we have to switch to this setting which makes me wonder if thunderbird or zimbra made the causing changes?!?

After further testing it seems to be an problem with every shared folder [EDIT and not only completely sharedaccounts inbox]. The main shared folder is inaccessible but subfolders are working.
