There are ways of taking backup but since you are not able to open ZD it's difficult.
You can try upgrading ZD by downloading latest one https://www.zimbra.com/downloads/zimbra-desktop/. Upgrade will not delete any data, so you might expect to have ZD running with newer version.

If you are on windows OS and using 64-bit version of ZD then make sure you install 64-bit JDK.

Are you guys using ZD latest 7.3 GA version? This issue was reported on beta and it is fixed in GA build.

On Windows it is under C:\Users\<user-name>\AppData\Local\Zimbra Desktop.

You should have got auto-update notification, but if not then you can manually download and install. It will do upgrade, no uninstallation is needed.
