I noticed the same thing with my 5.0.7 install. Going to 5.0.8 didn't correct it, which I figured wouldn't. I haven't had any chance to troubleshoot it though.

Really? I'm on 4.5.6 and my users in default have a zimbraCOSId. Can you do:

zmprov ga accountindefault | grep zimbraCOSId
Should give you the COS also...unless they changed that between 4.5.6 and 4.5.10.

Or, ssh in and run zmaccts as zimbra user.
