Do you get any results if you run these commands,
grep SPAM /var/log/zimbra.log

grep blocked /var/log/zimbra.log

I'm afraid I don't know how to do that. I'm sure it's possible, but I wouldn't know where to make the change.

I believe that you are not allowed to add any branding to the open source edition, but I'll let someone else confirm this.
Changing colours is fine and can be done from the admin console,
Global Settings > Themes



If you want to do it per domain,
example.com > Themes

I can successfully generate charts from the data available in /opt/zimbra/zmstat. However, this data doesn't include zmmtastats such as mta-count and filter-virus.
