I was just browsing the internet and took a peek at Exchange 2007.
It seems like they are adding Unified Messaging which basically means you can access your voice messages, emails and faxes within outlook.
What is the status of this type of integration is Zimbra ?
I know there is a zimlet to talk to Asterisk but are we able to view and hear our voicemail in zimbra ?
Fax is interesting too ...

Set asterisk up to forward your vm as an email to you.
That's the only current integration (but, you know, we are open source, and so is asterisk If the com_zimbra_asteriskvm zimlet is still around, that's a start at vm integration.

What about Fax , is there any zimlet to integrate faxes ?

As with voicemail, your fax server would send an email to a Zimbra user.
Exchange 2007 has no native voicemail or fax capability. Exchange 2007 isn't a phone switch, and doesn't have PSTN interfaces. E2k7 relies on others for the VM/fax interface (Nortel/Avaya/Cisco, etc)
'Unified Messaging' in this context just means they may have a viewer/player for certain output filetypes sent by your voice switch/fax server.
