I've found sources saying two different locations for sauser.cf in Zimbra 7. One says /opt/zimbra/conf/sauser.cf and the other says /opt/zimbra/conf/sa/sauser.cf
Which is correct?
How do I know those rules are working?

It depends on your Zimbra version. As you say you have v7.x, according to this wiki document http://wiki.zimbra.com/wiki/SpamAssassi ... amAssassin valid location should be /opt/zimbra/conf/sauser.cf
To see what tests were applied to the filtered e-mail and the score it actually has, you could see the x headers in the e-mail itself and see if the customizations you do to your sauser are reflected there or not.

I believe I saw both paths in the wiki. I don't have a reference for the other one at this time, so I'll just assume I put it in the right place.
I was going to say I haven't seen any difference, but then I noticed a message come through with pyzor and some points assigned to it.
