Hi guys

I have to doubt

Recently I configured a Zimbra server version 8.7.11, I have my default domain and I will have more domains on that same server, I doubt, do I have to have a certificate for each domain?

Yo do not need to unless you are going to keep the url to access webclient/zimbra same for all the domains.
