Your entries look good but how did you add them... Hopefully with crontab -e ???
Also, please put the full pathname for env in your crontab ... On centos it is /usr/bin/env ... Run env from the command line to see what you should expect. If that /tmp/env.output is empty you know that cron isn't running your zimbra crontab entry. I would then back up a bit and verify why. At the very least you should see an error in those log files. (generally /var/log/syslog.log)
At this point, my best guess is either you don't have cron running or syslog running...because you should be seeing something in your logs good or bad with these changes. More like cron because you said you saw STATUS lines when you ran the zmstatuslog command by hand.
Perhaps restart cron and look for some errors.
Note: if you have syntax errors in your crontab, it will be noted in your system logs.
