Is it possible to create a master/master or master/slave replication between Zimbra LDAP and another LDAP server openldap for example?

you can already do it with Zimbra. You can install Zimbra with only OpenLDAP service as a Master or a Slave.

Yes I know that, but I am searching for a way to replicate Zimbra ldap with and existing LDAP server, to be precise it's 389DS.

389DS supports adding new attributes and objectclasses via it's console and it supports replication of a specific attributes.

Unless you want to tinkle with your Zimbra and your 389DS.
I think this is not a good option.
