Sorry if this has been answered before but what kind of bandwidth does this thing require on the server side? Obviously this question is dependant on the number of users, but how much overhead does the zimbra client add?

The client itself is a few hundred k, but it's only downloaded once. The only bandwidth needed then is for the SOAP backed, IMAP, POP, SMTP, etc. That's dependant on the number of users, how much they use the system, and the size of messages. The overhead of the client is very low as we only put a JSON (Javascript object notation) wrapper around transaction.
