I am using VMFS and have never tried RDM.

Are you using hyper-v core or hyper-v on a full server install? If on core I don't know..if on full server install just use windows backup. That's what i've done for quite some time.

Which option is better for backup when running zimbra in centos...is there any backup package for purchase

If you read through the main Zimbra website, the wiki or even these forums (the thread in which you've posted already mentions some of them) you'd already know the answer to that. You can purchase Zimbra NE, ZeXtras (from the Zextras Website), ZeXtras NG from Zimbra or even roll-your-own backups (for free) from the ZCS Wiki (or forums).

You can try ZeXtras suite which includes ZeXtras Backup for free for 30 days.

Guys, for those who use the rsync backup strategy (/opt/zimbra): How do you restore a specific account from there?

Another question is, could you clone a zimbra mailbox server using this strategy? I mean, is it possible to clone an empty mailbox server and add it to the cluster? Any suggestions about what to do to keep zimbra mailbox servers in the same version? It seems every time I create a new mailbox server it updates automaticaly to the newest packages.
