If I may
Of course you can install Zimbra on openstack, I saw that, it's still running (snapshots take hours ...)
IMHO, Openstack is an IaaS platform, made for "on-demand " deployments
your zimbra server, I guess, is a permanent installation, and if it's huge, it will be heavy on I/Os so why bother the overhead of swift/glance (or ceph) for something permanent where you have the possibility to manage on a RAW LUN from your storage.

If you choose to install on openstack, please report back the performance

take care

We've hosted more than 20K email domains on multiple Zimbra systems all running on CloudStack with no issues. I/O is I/O, so while the SAN > Hypervisor > VM adds some overhead, if you have good I/O there will be no issues.

In our experience, active email systems are some of the most I/O intensive applications out there, so even if you run Zimbra on physical metal servers, you still need performant storage for many of the /opt/zimbra/ subdirectories.

Hope that helps,
Mark

Openstack is a platform for Cloud Platform, and then at the bottom, you can have different Virtualization, usually using the native KVM, but even VMware: In Openstack you have as well different Storage implementations as Ceph, Swift, Gluster, etc: So, you need to let us know more exact about your Openstack implementation, as if you are using a regular VMware environment but in top Openstack to orchestrate the VM, etc. Then I will say it's supported, as Zimbra supports VMware, same as if you are using the usual KVM virtualization and LVM, but for other cases or scenarios, should work, but it will mark as "not supported" for Zimbra, as the QA has not tested all the scenarios with Openstack.
