Email address not forwarding from other software

So I'm trying to move to Zimbra desktop from Thunderbird but the only thing that's not working is our sales software can send PDF quotes and invoices as a new email that open in whatever email client, but Zimbra does not have the "mail to" filled in with our customer's email address, it's blank.

It works perfectly in Thunderbird and Postbox (notwanting to have to pay for Postbox though).

Any ideas?

The software we are using is Windward System 5 if this helps.
