I * think the way to do it is: 1. stop zimbra, 2. make sure zimbra won't start automatically. 3. upgrade ubuntu. 4. install the correct zimbra for your new system, you might want to install some prerequisites. It should install OVER your old stuff (i.e. upgrade) and you should be fine. BUT DON"T TAKE MY WORD FOR IT PLEASE. (No I am not yelling!). Please read the forums (that are offline now, but when they come back).

we recently updated one customer from ubuntu10.04lts/zimbra8 to ubuntu14lts/zimbra8.5. super easy. basically you'll perform a do-release-upgrade twice (once to 12, second time to 14), install libperl5.18 then update the zimbra package to 8.5 with the --skip-activation-check option. simply reactivate your license once zimbra is up and running and you're good to go.

I didn't try Ace Suares solution, but it can probably work fine.
Also you can use this method : http://wiki.zimbra.com/wiki/ZCS_to_ZCS_rsync_Migration
It works good
