For a mail server you need a 'public' reverse DNS record - you need to fix that.

If you're talking about the root password then you can recover from it's 'loss'. Try one of the solutions you'll find doing an internet search for the following:

"how can I recover my centos server password"

You haven't given any information on the 'specifications' of your VM regarding RAM, HD space etc. Is this a VMware VM or some other hypervisor?. FWIW, I've never had any problems in running Zimbra as a VM.
