Some years and a lots of zimbra-updates later ... there is no solution for this big broblem. CalDAV ist not useable in Thunderbird, because a lot of error messages on the ui. Yes, all zimbra services are running.

I tried a zimbra restart and also a complete system reboot. But the problem is the same.

I found nothing about this specific problem, so I have no idea, what I can try or witch additional log files could be helpfull.
