When I do an rsync of Zimbra I usually use the options -avH --delete and I don't use -K.
I don't see why this should matter in your case, but perhaps it's worth a try.

Hm, most people have the opposite problem, wanting to keep IM even though it's disabled by default in ZCS 7. In fact I'm surprised it didn't just go away for you. When I restored IM in ZCS 7, I turned on all the properties you mention above, but also zimbraPrefIMAutoLogin. So maybe if you turn that ...

Might try exporting them all out of address book (either use the export command or I believe you can drag items out of AB into the Finder). Then import them back in.
