If the former employees were removed from the zcs system, and are still showing up in the "To:" field, I would suspect they are still in your E-mailed contacts folder. Have you checked your E-mailed contacts folder?

If you are using private IPs (192.168.x.x), you may require to use a Split DNS configuration. Here's a link:

Since you are using the OSS version, you may need to investigate if imapsync would work for you. Imapsync is not a Zimbra, but other SysAdmins have had used it in the past with great of success.

After some investigation, I believe this issue is solved. It turned out the zimbraSmtpHostname attribute was pointing to a relayhost, instead of localhost or zmhostname.
