You should be fine with installing ZCS on S1, and then copy /opt/zimbra from S2 across to S1. There are several threads about migrating from one ZCS server to another. I'm with wannabetenor on the whole FF issue.
I'm running 1.07 and 1.5.0 on both Windows and Linux machines at different sites which have different connection speeds, whithout any issue.

A connector for Evolution similar to the Outlook connector and the Apple iSync would be invaluable for the Linux desktop, and a way of connecting GAIM to the IM side of things would also enhance the whole suite IMHO
