For CardDAV support, I would really recommend going to ZCS 7 and Mac OS 10.7.
You might get it working with your current combination (although you may have to upgrade ZCS at least within 6.x), provided you only have a single domain in Zimbra. Search the forums for more information.

CardDAV doesn't work particularly well in Mac OS 10.6, as shown by this thread. To get it to work, I'd recommend starting with a Lion upgrade, and I would consider upgrading ZCS to 7.1.3 as well. (Even if you stay on 6.x, you should upgrade to a newer version--a large number of bugs have been fixed ...
