WHEN I GO INTO PREFERENCES -> ZIMLETS, THIS IS HOW MY ZIMLETS ARE SHOWING UP (SEE ATTACHED IMAGE).
WHEN I LOOK AT THE ZIMLETS FROM THE ADMIN CONSOLE OF THE SAME SERVER, THEY APPEAR CORRECT.
DOES ANYONE KNOW WHAT MIGHT BE GOING ON?

Email is stored on the server in plain text, not encrypted. If you want to encrypt it, you will have to use a filesystem underneath the mailbox store that will do the encryption.

That should be fine. Just make sure you're not using NFS or CIFS or any kind of network file system. Make sure its an iSCSI volume that you can actually mount as a volume within the Zimbra server and have a local filesystem on.
