I was more getting at the fact that the OST file when using Exchange server can not just be moved and put on another PC as the profile and the profile is unique. What is the reason you can not run Zimbra and Exchange server both on the same profile at the same time?

Yes I understand and agree with that totally except a host will have options set on their server that covers all their hosted clients. I am told that if I want a change it will affect every domain hosted. Am I correct in understanding Zimbra licences must be used all on the same server?

Well I am not 100% sure but what happens but if you are running multiple profiles Windows Desktop Search will only index the default outlook profile. That limitation was fixed when Outlook 2003 came out, by standard it is 40G which should be enough for most people, no email is not for sending iso images of DVD's ;-)
