/var/log/zimbra.log will show you which server is sending those emails.

You can also Search for that email address in the Admin Console.

FWIW, Zimbra have accepted ZBUG-3883 to cover adding this functionality (removing ActiveSync devices) to the Admin Console.

You will also want to dump and restore LDAP when you restore from a Veeam backup. Veeam restores Linux Sparse files (LDAP database) as a regular file. Veeam does not support Linux sparse files. What makes your customer think that the default MariaDB installed as part of every mailbox server will be overloaded? How many thousands of mailboxes per server is your customer expecting to run?
