What other VMs are running on the ESXi hosts? If your Zimbra VM seem to stall (with that many vCPUs configured) it may also be the Co-Stop oder CPU-Ready of the ESXi Server. Just check dmesg if there are "blocked for more than 120 seconds" messages. This will point to ESXi overcommittment....
