/var/log/zimbra.log will show you which server is sending those emails.

FWIW, Zimbra have accepted ZBUG-3883 to cover adding this functionality (removing ActiveSync devices) to the Admin Console.

You will also want to dump and restore LDAP when you restore from a Veeam backup. Veeam restores Linux Sparse files (LDAP database) as a regular file. Veeam does not support Linux sparse files.
