maybe you can share you config xml file and any other logs e.g.: syslog

maybe you could try to investigate on system logs as well (/var/log/syslog or messages)

any related contrab entry? "crontab -l" for user root or zimbra that specified restart of zimbra service?

have you able to solve this? I'm also having this issue with ZCS NE 7.2 on CentOS 5.5

changing /opt/zimbra/jetty/webapps/zimbra/skins/_base/logos/TouchLoginBanner.png and replacing with with another image with same name does not change default logo.

are you on multiserver?

I'm also having ldap ssl issue, but during upgrade. Because only mailbox hostname wth commercial ssl.

you could try bash scripting with "grep" & "cut" command from "mailq" output
