You need to make sure you migrate LDAP services to the single server you want to reduce to, and then move mailboxes to the single server.

Just to add to that, I found this specific text in there, so it doesn't look like wildcards will do what you are looking for, unfortunately:
Wildcards (*) are only supported at the end of word, and the search works as if it's a prefix search.

The notes at Zimbra Web Client Search Tips - Zimbra :: Wiki state that the wildcard works after a prefix. I don't believe the indexes are set up to allow a wildcard to come at the beginning of a word.
