How change ownership of a shared address book.

We have an address book that is shared to everyone in the company. It contains external contacts.

The person who setup the address book has now left the company. How can we change ownership to that person's replacement?

Maybe you should consider to change the account into a resource account.
You can do it by using command line and changing objectClass.

Do you have an example command or link to a zimbra wiki article on that?

Changing an account into a resource change the features embedded by it.
No more ActiveSync for example. But you earn an account on the license.
zmprov will allow you to delete or to add the objectClass you need to change your account into a calendar resource.

If it's a shared address book, why would I want to change it into a calendar?

Not a calendar, a calendar resource, which is the real term for Zimbra account resource : e.g. zmprov getCalendarResource resource_name@domain.tld
