Did you install the CDO and MAPI download from Microsoft's site?
Also, did you get any errors on the initial install screen, marked by ! marks?

Using the following guidance from Anderson I made it all the way to Active Directory Settings:
Install 2k3

Install Mapi

Install Office 2k7

Install ZCB

Goto Control Panel - Mail - create BlackberryServer / BlackberryManager

Set BlackberryServer as the default and open Outlook to get GAL
Install BES

After SRP remove the local address book, leave the GAL address book.

I created 2 new users with mail accounts– blackberryserver and blackberrymanager
Created 2 new mail profiles on the server with zimbra collaboration suite – blackberryserver and blackberrymanager
Tried to install Exchange Mapi/CDO – received an error message- “cannot be installed with outlook
Ran the BES installation again – receive the same MAPI error

I managed to get it completely installed
It's even supposedly syncing my GAL, as blackberry server configuration sees it in the mapi profile configuration.
Only issue is when I try to add a user it doesn't work -- I'm assuming its because my GAL isn't synced, but its not very big. If I stop the BB controller service and open outlook I can navigate to the GAL -- but that doesn't necessarily mean it's sync'd to the computer.
I'll give it a little bit and let you guys know my findings tomorrow.
