is it ok to have an email server at a different domain than the email it hosts?
For example
email is for mycompany.com (user@mycompany.com, etc...)
email server for mycompany.com is at mail.companyremote.com (there are no email adresseses for user@companyremote.com)
Is there anything specific to be aware of with a setup like this? Would this likely be a red-flag for spam filters?
Does it even matter as long as the SPF record for the domain indicates the proper sending IP address and the MX records are setup properly?

I've got many other domains on my server without any problems. So you should be fine.
