Hi,
Just recently we encountered in our zimbra that not all logs are recorded. Emails were received by recipients but not record of logs in zimbra.log or zmmsgtrace.
This is our version by the way:
Release 8.8.15_GA_3869.RHEL7_64_20190917004220 RHEL7_64 NETWORK edition, Patch 8.8.15_P44.
