zm_build FOSS - Does build platform need to match target OS?

Hi,

Currently we are building and running zimbra FOSS on Rocky8. We want to test migrating to Rocky9. We are not using Docker build images.

In order to build zimbra 10.1 for Rocky9, is it necessary to create a second development environment on a Rocky9 machine, or can it be built on the same Rocky8 machine by specifying build switches to the build.pl script?

NOTE FOR SYNACOR: The latest OS versions with build instructions in the zm-build/README.md are "CENTOS 7" and "Ubuntu 16.04" - These are both EOL. Can you please update these instructions.
