How to change contact default display option?

Hi,
I search about this question and it has been asked few times. But, there was no solution about this. Is there anybody know that how we change the default File As option from one to another. For example from Last, First to First Last.
Also, how can we change the contacts display option that already saved as Last, First to First Last in a bulk method?
