I opened a Support Case to see if it would be OK to change Postfix's attribute "smtputf8_enable" from "no" to "yes", understanding that this implies full stack UTF-8 support as more clearly described here: https://www.postfix.org/SMTPUTF8_README.html
Zimbra created ZRFE-186 for this (or maybe ZRFE-186 has been around for ages and they just linked my Support Case to this RFE...).
Either way, I added a post to pm.zimbra.com, and this post here is therefore a shameless plug to troll for/request up votes on pm.zimbra.com if UTF-8 support is important to you and your customers. It may take a while for my post there to be approved.
On a related note, (I don't know if I missed the announcement on this or not, but...) you can now put in ZRFE-whatever as well as ZBUG-whatever numbers in the Bug Lookup tab in the Support Portal; it used to be only ZBUG numbers were searchable.
